Sprouted Open Sandwich:

1 slice of Gluten Free Bread

Avocado Spread:
1 Organic Avocado
1 tsp. Organic Lemon juice
Fresh Organic Dill to taste
Fresh Organic Cilantro to taste
1/4 tsp. Cayenne Pepper
Mix all ingredients together
Spread generously on bread
Celery cut and placed on top (can use cucumber, tomato, radishes)
Bok Choy Microgreens on top (can use other microgreens or sprouts)

Squash/Pumpkin/Sweet Potato Soup:

1 Organic butternut squash
1 Organic acorn squash
1 Organic small pumpkin
2 Organic sweet potatoes
8 cups Organic vegetable broth or stock
4 Shallots
2 Tbsp. All Spice
Ground pepper to taste

Cut up squash, pumpkin and sweet potato into small pieces.  Place in  large pot  and add rest of ingredients and cover.  Bring to boil then simmer for 45 minutes .  Cool then put in mixer and purée.  May add parsley on top for decoration.  Leftovers can be put in freezer.
